From Italy to the Middle East: The Culinary Journey of Chef Cladys Magagna

The world of hospitality often celebrates chefs who not only master cuisine but also shape the industry through leadership and innovation. One such figure is Cladys Magagna, an Italian culinary professional whose career journey spans Europe, the Caribbean, and the Middle East.

Born in Cossato in the province of Biella, Italy, Magagna developed an early appreciation for authentic Italian cooking. Growing up in a country where culinary traditions are deeply rooted in culture, he was naturally drawn to the art of food preparation. His passion eventually turned into a professional career that would take him far beyond Italy.

Magagna began working in kitchens across Italy and Austria, where he refined his culinary techniques and developed a strong foundation in European cuisine. These early experiences helped shape his philosophy around quality ingredients, disciplined kitchen management, and the importance of consistent standards in hospitality.

His career took a significant step forward when he joined Fairmont Hotels & Resorts. One of his notable roles was serving as Executive Chef at the Fairmont Southampton in Bermuda. During his time there, Magagna became involved in community-focused initiatives such as healthy cooking classes, demonstrating how culinary professionals can play a role beyond the kitchen by promoting healthier lifestyles.

Later, he moved to Abu Dhabi in the United Arab Emirates to work as Executive Chef at the Fairmont Bab Al Bahr. This period proved to be a turning point in his career. In 2014, his work was recognized when he received the Executive Chef of the Year award at the Gourmet Abu Dhabi Awards, a respected recognition within the regional hospitality industry.

Magagna continued expanding his influence when he relocated to Riyadh, Saudi Arabia, where he joined Al Khozama Investment Company as Director of Food and Beverage and Culinary Operations at the Al Faisaliah Hotel. In this role, he oversaw restaurant concepts, culinary operations, and large-scale dining experiences in one of Riyadh’s most prominent hospitality destinations.

In 2021, Magagna took another step in his professional evolution by founding Clamagroup, a Dubai-based consultancy specializing in food and beverage strategy and hospitality development.

From a small Italian town to leadership roles in international luxury hospitality, Magagna’s career reflects the global nature of modern culinary excellence. His journey highlights how dedication to craft, combined with strategic vision, can transform a chef into a respected industry leader.
